Maple Squares

maple-pecan-squares-02-crop-u798Bottom (the base)

1 cup whole wheat flour

1/4 cup brown sugar

1/2 cup butter

2/3 cup brown sugar

1 cup maple sugar

2 eggs, beaten

1/4 cup soft butter

1/4 tsp salt

1/2 tsp vanilla

2 tbsp whole wheat flour

2/3 cups oats

Rub flour, sugar and butter together. Press in square pan. Bake 5 minutes.

Combine brown sugar and maple syrup in a pan and boil for 5 minutes. ALLOW TO COOL.

Pour over beaten eggs. Stir constantly. Add remaining ingredients and spread over base. Bake for about 30 minutes (350 degrees or so). You will know it is done when you move the pan and it is firm around the edges, soft still in the middle but no longer super runny in the middle.

These are amazing! If they are too gooey, you can firm them up in the fridge before cutting. Cut into small squares.
